Honey Vanilla Greek Style Yogurt
This healthy treat tastes more like a decadent dessert and is so simple to make.
1 quart thick yogurt (how to make your own)
honey, preferably raw & local
1 vanilla bean
Line a colander with fine cheesecloth or use a very fine mesh strainer placed over a bowl to drain whey from the yogurt for 2-8 hours or until the desired thickness is achieved. (Keep the yogurt in the refrigerator while draining.)
Scoop the thickened yogurt into a bowl. Split the vanilla bean with a knife and scrape the seeds into the yogurt. Add honey to taste and stir until the yogurt, honey and vanilla are completely combined.
If thickened enough, this yogurt can be scooped with an ice cream scoop and served beautifully on top of a bowl of fresh fruit or berries.
